Summer Solstice Has Arrived! Drink It In With These Cocktails

Alas, the noble Spring season has departed but we’re not sad and neither should you be. Today is the first day of the rest of your summer, and that means it’s time to hit the beach, the pool, the backyard for assorted pursuits of revelry and relaxation. And while no one’s saying that you have to hit them with a glass of something delicious in your hand, we’re not saying it wouldn’t be just as fun, if not more so, if you did. Should you choose to, here are some grown folks’ options for you, and their ingredients run the gamut from raspberry cordials to Irish moonshine.

Tulla Tiki
By Egan’s Irish Whiskey

  • 1½ oz. Egan’s Irish Whiskey
  • 2/3 oz. Angostura Amaro
  • ½ oz. Orgeat
  • 11/3 oz. Pink Grapefruit Juice
  • 1/2 Passion Fruit
  • 2/3 oz. Lime Juice
  • 1 dash Angostura Bitters

Shake all ingredients with ice and strain into ice filled Tiki cup.

The Hare That Rocked The Mule
By Mad March Hare Irish Poitín 

  • 2 oz. Mad March Hare Poitín (a.k.a Irish Moonshine)
  • 2 oz. Apple Cider
  • 1 oz. Ginger Beer
  • ½ fresh Lime
  • 1 Cinnamon stick

Build in copper Mule mug on ice & stir.

Passion Tramp
Ophelia’s Electric SoapBox – Denver, CO

  • 2 oz. white rum
  • .5 oz. lime juice
  • .75 passionate juice
  • Top with Gosling’s dark rum float

Shake and serve.

Sangria con Frutas
El Five – Denver, CO

  • 4 750 ml bottles red wine (we use a Spanish red blend table wine)
  • 1 750 ml bottle brandy
  • 8 oz. pomegranate liqueur
  • 16 oz. lemon juice
  • 16 oz. orange juice
  • 8 oz. simple syrup (2:1 sugar to water)
  • 8 oz. water
  • 1 oz. Angostura bitters
  • 1 oz. Regan’s orange bitters
  • .25 oz. vanilla extract

Combine all. It’s best prepared 24 hours in advance. For service, add four ice cubes to a wine glass and top with a scoop of frozen fruit medley, then with six ounces of Sangria.

Violet Fizz
By The Bitter Truth

  • 1 oz. Fresh Lemon Juice
  • 1/2 tsp Fine Sugar
  • 1/2 oz. The Bitter Truth – Violet Liqueur
  • 1 1/2 oz. Gin
  • Plain Soda Water

Shake first four ingredients with ice. Strain over ice in a Collins or long drink glass and top with soda. Serve with straws.

  • 2 oz. Traditional Tequila White
  • ½ oz. grapefruit syrup
  • ¾ oz. lime juice
  • 1 pinch salt
  • “Squirt” soda

Pour tequila, grapefruit syrup, and lime juice into a 12oz mug. Add a pinch of salt with a spoon and stir. Top with ice and Squirt soda.

  • 2 oz. St. George Citrus Vodka
  • 2/3 oz. Spiced Ginger Syrup
  • 2/3 oz. Lemon Juice
  • 2/3 oz. Cranberry Juice

Build in collins, top with ginger ale and ice. Garnish with a cherry and biodegradable straw.

Summer Fling
Les Zygomates, Boston

  • 1.5 oz. House Infused Grilled Jalapeño tequila
  • 1 oz. fresh watermelon purée
  • .25 oz. fresh lime juice
  • .25 oz. agave

Shake and serve. Garnish with a fresh slice of watermelon.
